  • 810 fresh jalapeños (medium)
  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 lb thin-cut bacon
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Place a wire rack on a rimmed baking sheet and set aside.
  2. Wash and dry 8-10 jalapeños. Slice each one in half lengthwise. Use a small spoon to scrape out the seeds and white membranes. For more heat, leave a little membrane on; for mild, remove it all. Wear gloves if possible.
  3. In a small bowl, combine 8 oz softened cream cheese, 1 cup shredded sharp cheddar, 1/2 teaspoon garlic powder, 1/4 teaspoon onion powder, and a pinch of black pepper. Mix until well combined. Taste and adjust seasoning if needed.
  4. Using a small spoon, fill each jalapeño half with the cream cheese mixture. Don’t overstuff—smooth the tops with the back of the spoon.
  5. Cut bacon strips in half crosswise. Wrap one half-strip around each stuffed jalapeño half, starting at one end and overlapping slightly. Tuck the end of the bacon under the jalapeño to hold it in place. Trim excess bacon if needed.
  6. Place each bacon-wrapped bite on the wire rack, seam-side down. Leave space between each one for heat circulation.
  7. Bake for 20-25 minutes, until bacon is golden and crispy. Check at 20 minutes and add 5 more if needed. If not using a wire rack, flip each bite with tongs at the 12-minute mark.
  8. Remove from oven and let rest on the rack for 5 minutes. Transfer to a plate lined with paper towels to absorb excess grease. Serve warm.

For best results, use thin-cut bacon and a wire rack to ensure even crispiness. Jalapeños vary in heat; remove all seeds and membranes for a milder version.
