Ingredients

Scale
  • 6 cups apples, peeled, cored, and sliced (about 2 pounds; Granny Smith and Honeycrisp recommended)
  • 2 tablespoons fresh lemon juice
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour (swap with almond flour for gluten-free)
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1/2 cup chopped walnuts or pecans (optional)
  • Vanilla ice cream or whipped cream (for serving, optional)

Instructions

  1. Preheat oven to 350°F (175°C) and position rack in the center.
  2. Peel, core, and slice apples into 1/4-inch slices.
  3. In a large bowl, toss apple slices with lemon juice, granulated sugar, flour, cinnamon, and nutmeg until well coated.
  4. Pour apple mixture into a 9×13-inch baking dish and spread evenly.
  5. In a medium bowl, mix rolled oats, flour, brown sugar, cinnamon, and salt.
  6. Add cold, cubed butter to the oat mixture and blend with a pastry cutter, forks, or hands until mixture resembles coarse crumbs.
  7. Stir in chopped nuts if using.
  8. Sprinkle oat topping evenly over apples and pat gently to create an even layer.
  9. Bake for 40-45 minutes until topping is golden and apples are bubbling.
  10. Let cool for at least 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

Use a mix of tart and sweet apples for best flavor. Cold butter and rolled oats ensure a crispy topping. For gluten-free, substitute almond flour for regular flour. For dairy-free, use coconut oil or vegan butter. Toast nuts before adding for extra flavor. Re-crisp leftovers in the oven for best texture.
