Crispy Almondine Green Beans with Garlic Butter

A quick and easy side dish featuring crisp-tender green beans tossed with toasted almonds and fragrant garlic butter, delivering a perfect balance of crunch and buttery flavor.

  • 1 pound fresh green beans, trimmed
  • 3 tablespoons unsalted butter
  • 3 large garlic cloves, finely minced
  • ½ cup sliced almonds, lightly toasted
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • Optional: pinch of red pepper flakes

Instructions

  1. Trim and rinse the green beans under cold water.
  2. Bring a large pot of salted water to a boil. Add green beans and blanch for 2-3 minutes until bright green and just tender but still crisp.
  3. Drain and plunge green beans into ice water to stop cooking. Drain again and pat dry.
  4. Heat a dry skillet over medium heat. Toast sliced almonds for 2-3 minutes until golden and fragrant. Remove and set aside.
  5. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant but not browned.
  6. Add the drained green beans to the skillet and toss to coat. Cook for 3-4 minutes, stirring occasionally, until heated through and slightly crisp on edges.
  7. Sprinkle toasted almonds over the beans. Add salt, pepper, and red pepper flakes if using. Toss gently to combine.
  8. Remove skillet from heat and drizzle fresh lemon juice over the beans. Toss once more and transfer to a serving dish.

Notes

For extra crunchy almonds, add half at the beginning of sautéing and half at the end. Always blanch green beans and plunge into ice water to keep them crisp. Use fresh garlic for best flavor and avoid burning it to prevent bitterness. Dry beans well before sautéing to avoid butter spitting.
