  • 2 cloves minced garlic
  • 1 teaspoon rice vinegar
  • Pinch of red pepper flakes (optional)

Instructions

  1. Rinse and pat dry the salmon fillets. Cut into roughly 1-inch bite-sized cubes.
  2. In a large bowl, toss salmon cubes with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated.
  3. Combine panko breadcrumbs and Parmesan cheese in a shallow dish. Press each salmon cube into the mixture to coat all sides.
  4. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  5. Place coated salmon pieces in a single layer in the air fryer basket, avoiding overcrowding. Cook in batches if necessary.
  6. Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy outside, tender inside.
  7. While salmon cooks, whisk honey, soy sauce, minced garlic, rice vinegar, and red pepper flakes in a small saucepan. Warm over low heat for 3-4 minutes until fragrant and slightly thickened.
  8. Transfer cooked salmon bites to a bowl and drizzle with the honey garlic glaze. Toss gently to coat evenly.
  9. Serve immediately for best texture.
