  • 12 egg roll wrappers
  • 34 green onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce (low sodium recommended)
  • 1 teaspoon sesame oil
  • 1 cup shredded cabbage (optional but recommended)
  • 1 medium carrot, finely shredded
  • Salt and pepper to taste
  • Water (for sealing wrappers)

Instructions

  1. In a large mixing bowl, combine ground pork, minced garlic, grated ginger, sliced green onions, soy sauce, sesame oil, shredded cabbage, shredded carrot, salt, and pepper. Mix well until evenly combined and moist but not watery.
  2. Lay one egg roll wrapper on a clean surface with a corner pointing towards you (diamond shape). Place about 2 tablespoons of filling near the bottom corner, spreading evenly and leaving about 1 inch from edges.
  3. Fold the bottom corner over the filling, then fold in the two side corners snugly. Roll tightly towards the top corner. Dip your finger in water and run it along the top corner edge to seal the egg roll. Repeat with all wrappers and filling.
  4. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  5. Lightly spray or brush the egg rolls with oil on all sides to encourage crisping. Place them in a single layer in the air fryer basket without touching. Cook in batches if necessary.
  6. Air fry at 400°F (200°C) for 10-12 minutes, flipping halfway through (around 5-6 minutes), until golden brown and crispy and pork is fully cooked.
  7. Let the egg rolls cool for a couple of minutes before serving with your favorite dipping sauce.

Notes

If filling is too wet, add about 1 teaspoon cornstarch to bind before rolling. Avoid overfilling wrappers to prevent bursting. Flip egg rolls halfway through cooking for even crispiness. For gluten-free, use rice paper wrappers and gluten-free soy sauce. To reheat leftovers, air fry at 350°F for 3-5 minutes to maintain crispiness.
