  • 1 tsp garlic powder
  • 1 tsp paprika

  • ½ cup (120ml) buffalo sauce (e.g., Frank’s RedHot)
  • Olive oil or avocado oil spray
  • For the ranch dip:
  • ½ cup (120g) sour cream or Greek yogurt
  • ¼ cup (60ml) mayonnaise
  • 1 tbsp fresh chopped chives or green onions
  • 1 tsp dried dill
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • 12 tbsp milk to thin, if needed

Instructions

  1. Rinse and dry 1 medium head of cauliflower, then cut into bite-sized florets about 1.5 inches each, ensuring uniform size for even cooking.
  2. In a mixing bowl, whisk together ½ cup all-purpose flour, ½ cup water, 1 tsp garlic powder, 1 tsp paprika, and ½ tsp salt until smooth and free of lumps. Batter should be thick but pourable.
  3. Dip each cauliflower floret into the batter, letting excess drip off. Place coated florets on a parchment-lined tray or plate, keeping them separate.
  4. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  5. Arrange battered florets in a single layer in the air fryer basket. Lightly spray with olive or avocado oil.
  6. Cook for 15 minutes, shaking or flipping halfway through until golden brown and crisp.
  7. Transfer cooked cauliflower to a large bowl. Pour ½ cup buffalo sauce over and toss gently to coat evenly.
  8. Return sauced florets to the air fryer basket and cook an additional 5 minutes at 400°F (200°C) to set the sauce and add crispness.
  9. While cauliflower finishes cooking, mix sour cream or Greek yogurt, mayonnaise, chopped chives, dried dill, garlic powder, onion powder, salt, and pepper in a small bowl. Add milk to thin if desired.
