  • 1 lb Italian sausage (mild or spicy)
  • 4 medium Russet potatoes, peeled and sliced thin
  • 1 medium yellow or white onion, diced finely
  • 4 cloves garlic, minced
  • 4 cups chicken broth (low-sodium preferred)
  • 1 cup heavy cream
  • 2 cups fresh kale, stems removed and leaves chopped
  • Salt and pepper to taste
  • 1/2 tsp crushed red pepper flakes (optional)

Instructions

  1. Heat a large pot over medium heat. Add the Italian sausage, breaking it into crumbles with a spoon. Cook until browned and fully cooked, about 5-7 minutes. Remove sausage and set aside, leaving the drippings in the pot.
  2. Add diced onion to the pot and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for another minute, until fragrant.
  3. Layer the sliced potatoes into the pot and pour in the chicken broth. Bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes, or until the potatoes are tender.
  4. Reduce the heat to low and slowly add the heavy cream, stirring gently to avoid curdling. Let it simmer for 5 minutes.
  5. Toss in the chopped kale and cook for 2-3 minutes, until wilted.
  6. Return the cooked sausage to the pot and stir well. Add salt, pepper, and crushed red pepper flakes to taste. Serve hot with crusty bread or crackers.

Notes

For a lighter version, swap heavy cream with half-and-half. Use coconut cream for a dairy-free adaptation. Spinach can be substituted for kale.
