A comforting and creamy soup that combines the flavors of lasagna with the ease of a one-pot meal, perfect for chilly evenings or family gatherings.

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups cooked and shredded chicken breast
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 8 lasagna noodles, broken into bite-sized pieces
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until fragrant and translucent, about 3-4 minutes.
  2. Add the shredded chicken to the pot and stir to coat it in the onion-garlic mixture.
  3. Pour in the chicken broth and bring to a gentle simmer. Stir in the heavy cream and softened cream cheese, whisking until fully melted and combined.
  4. Break the lasagna noodles into bite-sized pieces and add them to the pot. Cook for 10-12 minutes, stirring occasionally to keep them from sticking to the bottom.
  5. Reduce heat to low and stir in the mozzarella and Parmesan cheeses until melted and smooth.
  6. Season with Italian seasoning, salt, and pepper. Add the spinach and let it wilt into the soup for about 2 minutes.
  7. Give everything a final stir and adjust seasoning to taste. Serve hot with extra Parmesan and a sprinkle of fresh parsley if desired.

Notes

Avoid overcooking the noodles as they will continue to soften in the hot soup. Use fresh cream cheese for a smoother texture, and shred your own cheese for better melting.
