  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon beet juice or smoked paprika
  • 1 tablespoon finely chopped fresh chives or parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off two garlic cloves, drizzle with olive oil, wrap in foil, and roast for about 20 minutes until soft and fragrant. Let cool and squeeze out the roasted garlic paste.
  2. In a medium bowl, whisk together 1 cup mayonnaise, 2 tablespoons lemon juice, and 1 teaspoon Dijon mustard until smooth and creamy.
  3. Stir in the roasted garlic paste or finely minced raw garlic and mix well.
  4. Slowly whisk in 1 tablespoon extra virgin olive oil to add richness and silky texture.
  5. Add ½ teaspoon salt and ¼ teaspoon freshly ground black pepper. Taste and adjust seasoning as needed.
  6. Stir in 1 teaspoon beet juice or smoked paprika for a pink hue. Adjust amount for desired color intensity.
  7. Cover and refrigerate for at least 30 minutes to let flavors meld.
  8. Before serving, garnish with finely chopped fresh chives or parsley.
