A rich and velvety seafood chowder that combines fresh seafood, hearty vegetables, and a creamy broth for the ultimate comfort food experience.

  • 2 tablespoons unsalted butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 2 cups potatoes, peeled and cubed (Yukon Gold recommended)
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 pound seafood mix (shrimp, scallops, and white fish)
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme (fresh or dried)
  • Salt and pepper to taste
  • Optional garnish: chopped parsley or chives

Instructions

  1. In a large pot, melt 2 tablespoons of butter over medium heat. Add the chopped onion, minced garlic, and diced celery. Cook for 5 minutes, stirring occasionally, until softened and fragrant.
  2. Stir in the cubed potatoes and cook for another 2 minutes, letting them absorb some of the flavors.
  3. Pour in 4 cups of seafood stock. Bring the mixture to a boil, then reduce the heat to simmer. Cover and cook for 15 minutes, or until the potatoes are tender.
  4. Stir in the shrimp, scallops, and white fish. Let them cook for 5-7 minutes, or until they’re opaque and cooked through.
  5. Lower the heat and stir in 1 cup of heavy cream. Add smoked paprika, thyme, salt, and pepper to taste. Let everything simmer for 5 minutes, stirring occasionally.
  6. Taste and adjust the seasoning if needed. Ladle the chowder into bowls and garnish with parsley or chives. Serve hot with crusty bread or crackers.

Notes

For a thicker chowder, mash some of the potatoes against the side of the pot before serving. Add a splash of seafood stock or water if the chowder is too thick.
