  • 1 can (10 ounces) Rotel tomatoes with green chilies, undrained

  • Optional: 2-3 green onions, sliced
  • Optional: 1 small jalapeño, diced
  • Optional: Handful of cilantro, chopped
  • Optional: Salt, pepper, hot sauce to taste
  • Optional: Splash of milk (1-2 tablespoons, if needed for consistency)

Instructions

  1. Add sausage to a large skillet over medium-high heat. Break up with a wooden spoon and cook for 5-7 minutes until browned and no pink remains. Drain excess grease if needed.
  2. Pour in Rotel tomatoes with green chilies (undrained). Stir well and simmer for 2-3 minutes until flavors meld.
  3. Cut cream cheese into cubes and add to the skillet. Stir constantly until melted and creamy, about 3-4 minutes.
  4. Optional: Stir in shredded cheddar cheese and/or sliced green onions until melted and combined.
  5. Taste and adjust seasoning with salt, pepper, or hot sauce. If dip is too thick, add a splash of milk and stir.
  6. Transfer hot dip to a serving bowl. Garnish with cilantro, extra cheese, or jalapeños if desired.
  7. Serve immediately with tortilla chips, crackers, or sliced baguette.

Notes

For a vegetarian version, use plant-based sausage and dairy-free cream cheese. Brown the sausage well for maximum flavor. If dip thickens, add a splash of milk or sour cream.
