  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 packet ranch seasoning mix
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1/2 cup freshly grated Parmesan cheese
  • 12 ounces pasta (penne or rotini)
  • 1 cup chicken broth
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
  2. Sprinkle chicken pieces with salt, pepper, and half of the ranch seasoning mix.
  3. Heat olive oil in a large skillet over medium heat. Add chicken and cook until golden brown and fully cooked, about 6-8 minutes. Remove chicken and set aside.
  4. In the same skillet, add a little more olive oil and sauté minced garlic for 1 minute until fragrant.
  5. Pour in heavy cream and bring to a gentle simmer. Stir in cream cheese until melted and smooth.
  6. Add remaining ranch seasoning mix and chicken broth to the sauce. Stir well to combine.
  7. Add grated Parmesan cheese, letting it melt into the sauce. Adjust consistency with reserved pasta water if needed.
  8. Toss cooked pasta and chicken into the skillet with the sauce. Mix until everything is evenly coated.
  9. Sprinkle with fresh parsley and serve immediately while warm.

Notes

Save pasta water to adjust sauce consistency. Use fresh Parmesan for better flavor. Taste and adjust seasoning before serving.
