  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin spice
  • Pinch of salt
  • 12 oz semi-sweet chocolate chips
  • 2 tbsp coconut oil or vegetable shortening
  • Optional toppings: Crushed graham crackers, chopped nuts, sprinkles, flaky sea salt

Instructions

  1. Prepare the filling: In a mixing bowl, combine the pumpkin puree, softened cream cheese, powdered sugar, vanilla extract, pumpkin spice, and salt. Beat with a hand mixer or stand mixer until smooth and well combined.
  2. Chill the filling: Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the filling to firm up.
  3. Form the truffles: Using a cookie scoop or tablespoon, portion the chilled filling into small balls. Roll each ball between your palms to smooth it out. Place the balls on a parchment-lined baking sheet and return to the fridge for 20 minutes.
  4. Melt the chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each, until smooth and fully melted.
  5. Coat the truffles: Using a fork or dipping tool, drop each truffle into the melted chocolate, ensuring it’s fully coated. Lift out and allow excess chocolate to drip off before placing it back on the parchment-lined baking sheet.
  6. Decorate: While the chocolate is still wet, sprinkle your toppings of choice over the truffles.
  7. Set the chocolate: Refrigerate the coated truffles for 15-20 minutes, or until the chocolate is firm.

Notes

Use room-temperature cream cheese for a smooth filling. Chill the filling thoroughly to make rolling easier. Sprinkle toppings immediately after dipping in chocolate to ensure they stick.
