  • 12 slices white bread, crusts removed and sliced thinly
  • Fresh chives, finely chopped for garnish (optional)

Instructions

  1. Finely shred 2 cups of sharp cheddar cheese.
  2. Drain and finely chop 4 ounces of roasted red pimentos.
  3. In a mixing bowl, combine shredded cheddar, chopped pimentos, softened cream cheese, mayonnaise, garlic powder, onion powder (if using), Worcestershire sauce, salt, and pepper. Stir gently until smooth and creamy.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let flavors meld and make spreading easier.
  5. Trim crusts from 12 slices of white bread using a sharp knife.
  6. Spread about 2 tablespoons of the chilled pimento cheese evenly over 6 slices of bread. Top with the remaining slices to form sandwiches and press gently to seal.
  7. Slice each sandwich into 3 or 4 bite-sized pieces.
  8. Sprinkle with finely chopped fresh chives for garnish, if desired.
  9. Arrange on a platter and serve immediately or cover and chill until ready to enjoy.
