  • 1/2 teaspoon salt, adjust to taste
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Rinse the cauliflower head under cold water and cut into evenly sized florets (about 1-inch pieces).
  2. Optional: Preheat oven to 400°F (200°C). Wrap garlic cloves in foil and roast for 20 minutes until soft and fragrant.
  3. Bring a large pot of salted water to a boil. Add cauliflower florets and cook until very tender, about 10-12 minutes. Drain thoroughly in a colander.
  4. Let cauliflower sit in the colander for a few minutes to steam off excess moisture. Pat gently with a paper towel if needed.
  5. Transfer cauliflower to a food processor. Add softened cream cheese, butter, roasted or raw garlic, salt, pepper, and heavy cream. Pulse until smooth and creamy, scraping down sides as needed. Add more cream if too thick.
