  • 3 large garlic cloves, minced

  • 1/2 cup low-sodium chicken broth (120 ml)
  • 1/3 cup freshly grated Parmesan cheese (about 30 grams)
  • 1 teaspoon Italian seasoning (blend of oregano, basil, thyme)
  • Pinch of red pepper flakes (optional)
  • Handful of fresh basil leaves, chopped
  • Olive oil (for searing and sautéing)
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts between two pieces of parchment paper and gently pound to about 1/2 inch thickness. Season both sides with salt, pepper, and Italian seasoning. (5 minutes)
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken breasts and cook without moving for about 5 minutes until golden brown. Flip and cook another 4-5 minutes until internal temperature reaches 165°F (74°C). Remove chicken and set aside, tented with foil. (10-12 minutes)
  3. Lower heat to medium. Add more olive oil if needed. Sauté minced garlic for about 30 seconds until fragrant. Stir in chopped sun-dried tomatoes and cook for 1-2 minutes. (3 minutes)
  4. Pour in chicken broth and scrape browned bits from pan. Simmer for 2 minutes to reduce slightly. Add heavy cream and stir to combine. Bring to gentle simmer and cook for 3-4 minutes until sauce thickens slightly. (6 minutes)
  5. Stir in grated Parmesan cheese until melted and smooth. Adjust seasoning with salt, pepper, and red pepper flakes if using. Sauce should coat the back of a spoon. (2-3 minutes)
  6. Return chicken breasts to pan, spoon sauce over them, and simmer together for 2 minutes to meld flavors and reheat chicken. Remove from heat and sprinkle with fresh chopped basil before serving. (3 minutes)

Notes

If sauce is too thick, loosen with a splash of chicken broth or cream. Avoid boiling cream aggressively to prevent curdling. Let chicken rest after searing to keep it juicy. Use sun-dried tomatoes packed in oil for best flavor. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
