  • 2 tablespoons all-purpose flour

Instructions

  1. Heat a large pot over medium-high heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain any excess grease and set the beef aside.
  2. In the same pot, melt 2 tablespoons of butter over medium heat. Add the diced onion and minced garlic, cooking until softened and fragrant (about 2-3 minutes).
  3. Sprinkle the flour over the onion mixture, stirring constantly for about 1 minute to create a roux.
  4. Slowly whisk in the beef broth and milk, ensuring there are no lumps. Bring to a gentle simmer.
  5. Add the cooked ground beef back into the pot, followed by the uncooked macaroni. Stir well and cook, stirring occasionally, for 8-10 minutes or until the pasta is tender.
  6. Reduce the heat to low and stir in the shredded cheddar cheese and cream cheese until melted and fully incorporated.
  7. Season with salt and pepper to taste. If the soup is too thick, add a splash of milk or broth to reach your desired consistency.
  8. Serve hot, garnished with parsley, extra cheese, or crumbled bacon for added flair.
