Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 8 minutes. Transfer to paper towels to drain and crumble once cool. Save a bit of bacon fat if desired.
  2. Pat dry the chicken breasts and season lightly with salt, pepper, and garlic powder. Place them in the bottom of the crockpot in a single layer.
  3. In a medium bowl, combine softened cream cheese, sour cream, ranch seasoning, and shredded cheddar cheese. Mix until well combined and creamy.
  4. Spoon the creamy mixture evenly over the chicken breasts. Sprinkle the crumbled bacon on top, then add the chopped fresh spinach over everything.
  5. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until chicken is tender and reaches an internal temperature of 165°F (74°C). Avoid opening the lid frequently.
  6. About 15 minutes before serving, gently stir the mixture to combine the sauce with the spinach and bacon. Adjust salt and pepper to taste.
