A quick and easy creamy buffalo chicken dip that combines spicy buffalo sauce with melted cheese for a crowd-pleasing appetizer perfect for cozy gatherings and game days.

Ingredients

Scale
  • 2 cups shredded cooked chicken (about 300g), rotisserie chicken recommended
  • 8 ounces cream cheese (225g), softened
  • ½ cup buffalo wing sauce (120ml), e.g., Frank’s RedHot
  • ½ cup ranch dressing (120ml)
  • 1 cup shredded cheddar cheese (100g), sharp or mild
  • ½ cup blue cheese crumbles (optional, about 50g)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons green onions, thinly sliced
  • Celery sticks and tortilla chips for serving

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch baking dish.
  2. In a mixing bowl, combine softened cream cheese and ranch dressing. Mix with a hand mixer or spatula until smooth and creamy.
  3. Stir in garlic powder, onion powder, salt, and pepper to taste.
  4. Add buffalo wing sauce and mix thoroughly. Adjust heat by adding more sauce if desired.
  5. Fold in shredded cooked chicken gently to coat with sauce.
  6. Mix in shredded cheddar cheese and blue cheese crumbles if using.
  7. Transfer mixture to the greased baking dish and spread evenly. Optionally, sprinkle extra cheddar cheese on top.
  8. Bake for 20-25 minutes until bubbly and cheese is lightly browned.
  9. Remove from oven and let cool for 5 minutes. Garnish with sliced green onions.
  10. Serve warm with celery sticks, tortilla chips, or preferred dippers.

Notes

Let cream cheese soften at room temperature for easier mixing. Use rotisserie chicken for convenience and flavor. Start with half a cup of buffalo sauce and adjust heat to taste. If dip is too thick after baking, stir in a splash of milk to loosen. Watch baking time closely to avoid burning cheese. Can be made ahead and baked before serving. For dairy-free or vegan versions, substitute cream cheese, ranch, and cheeses accordingly.
