A delicious and easy-to-make stuffed French toast filled with creamy blueberry cream cheese, perfect for breakfast or brunch.

Ingredients

Scale
  • 8 slices thick brioche or challah bread (about 1 inch thick, day-old preferred)
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (150 g) fresh blueberries, rinsed and patted dry
  • 4 large eggs, room temperature
  • 1 cup (240 ml) whole or 2% milk (or almond/oat milk for dairy-free)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons powdered sugar
  • 2 tablespoons unsalted butter
  • Maple syrup or honey for serving (optional)

Instructions

  1. Prepare the cream cheese filling: Beat 8 oz softened cream cheese with 2 tablespoons powdered sugar and 1 teaspoon vanilla extract until smooth and creamy (3-4 minutes with mixer). Set aside.
  2. Stuff the bread: Slice each bread piece horizontally to create a pocket without cutting all the way through. Spread about 2 tablespoons of cream cheese mixture inside each pocket, add 1 tablespoon fresh blueberries, and close gently.
  3. Make the custard: Whisk together 4 eggs, 1 cup milk, 1 teaspoon vanilla extract, and 1 teaspoon ground cinnamon until combined and frothy (about 2 minutes).
  4. Soak the stuffed bread: Dip each stuffed slice into custard for about 20 seconds per side, allowing bread to absorb but not become soggy.
  5. Cook the French toast: Heat a non-stick skillet or griddle over medium heat and melt 2 tablespoons butter. Cook soaked bread slices 3-4 minutes per side until golden brown and cooked through.
  6. Keep warm: Transfer cooked slices to a cooling rack over a baking sheet to keep crisp while cooking remaining slices.
  7. Serve: Dust with powdered sugar and drizzle with maple syrup or honey if desired. Serve immediately.

Notes

Use day-old bread to prevent sogginess. Keep ingredients at room temperature for smooth custard. Soak bread 20 seconds per side for best texture. Cook on medium heat to avoid burning. Chill stuffed bread 10 minutes before soaking if filling leaks. Make ahead by assembling and refrigerating overnight, then soak and cook fresh.
