  • 6 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 3 cups sharp cheddar cheese, shredded
  • 1 cup Colby Jack cheese, shredded
  • 4 oz cream cheese, softened
  • 1/2 tsp ground mustard (optional)
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1 cup panko breadcrumbs
  • 3 tbsp unsalted butter, melted
  • 1/2 cup Parmesan cheese, finely grated
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Bring a large pot of salted water to a boil. Add elbow macaroni and cook until just al dente (about 7–8 minutes, 1 minute less than package instructions). Drain, rinse lightly, and set aside.
  3. In a medium saucepan over medium heat, melt 6 tbsp butter. Add flour and whisk constantly for 1–2 minutes until a smooth, pale roux forms.
  4. Slowly whisk in milk and heavy cream. Continue stirring until thickened, about 4–5 minutes.
  5. Add shredded cheddar, Colby Jack, and cream cheese. Stir until melted and smooth.
  6. Season with ground mustard, salt, black pepper, and smoked paprika. Taste and adjust seasoning if needed.
  7. Pour drained pasta into the cheese sauce and stir until evenly coated.
  8. Transfer the mixture to the prepared baking dish and smooth the top.
  9. In a mixing bowl, combine panko breadcrumbs, melted butter, and Parmesan cheese. Mix until crumbs are evenly coated.
  10. Sprinkle the breadcrumb mixture evenly over the mac and cheese.
  11. Bake for 25–30 minutes until bubbly and the topping is golden brown.
  12. Remove from oven and let rest for 10 minutes before serving. Garnish with fresh parsley.

Notes

For best results, slightly undercook the pasta so it finishes in the oven. Freshly grated cheese melts smoother than pre-shredded. Let the dish rest before serving for easier scooping. For gluten-free or dairy-free options, substitute pasta, flour, and cheeses as needed. Add-ins like jalapeños, bacon, or veggies can customize flavor.
