  • 1 tablespoon olive oil (for brushing)
  • 1 cup coconut milk (choose full-fat for creaminess)
  • Juice of 1 large lemon (about 2 tablespoons)
  • Zest of 1 lemon
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon honey
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon cornstarch
  • Optional: fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or cooking spray.
  2. Season the cod fillets generously with salt and pepper on both sides. Brush them with olive oil and place them in the prepared baking dish.
  3. In a small mixing bowl, whisk together the coconut milk, lemon juice, lemon zest, garlic, ginger, honey, soy sauce, and cornstarch until smooth.
  4. Pour the coconut lemon sauce evenly over the cod fillets, making sure each piece is coated.
  5. Bake the cod in the preheated oven for 20-25 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Remove the dish from the oven and let it sit for 2-3 minutes to allow the sauce to thicken slightly.
  7. Garnish with fresh cilantro if desired, and serve warm alongside rice, quinoa, or roasted vegetables.

Notes

Use fresh fish for better texture and flavor. Don’t skip the lemon zest for a burst of citrus. If the sauce is too thin, simmer it in a saucepan for 1-2 minutes to thicken.
