Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 bell peppers, diced (any color)
  • 3 cloves garlic, minced
  • 1 pound ground turkey
  • 1 cup canned pumpkin puree
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained
  • 1 can (15 ounces) kidney beans, drained
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cinnamon
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, fresh cilantro, diced avocado, lime wedges

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat.
  2. Add the diced onion and bell peppers. Sauté for about 5 minutes until softened and fragrant.
  3. Stir in the minced garlic and cook for 1 minute, being careful not to let it burn.
  4. Add the ground turkey to the pot. Cook, breaking it up with a wooden spoon, until browned and fully cooked (about 6-8 minutes).
  5. Sprinkle in the chili powder, cumin, smoked paprika, and cinnamon. Stir well to coat the turkey and veggies evenly.
  6. Pour in the canned pumpkin puree, diced tomatoes, drained beans, and chicken broth. Stir until everything is well combined.
  7. Bring the chili to a gentle boil, then reduce the heat to low. Simmer uncovered for 30 minutes, stirring occasionally.
  8. Taste and adjust seasoning with salt and pepper as needed.
  9. Serve hot with your favorite toppings like sour cream, shredded cheese, cilantro, and lime wedges.
