  • 1 ½ cups (270 g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together all-purpose flour, baking soda, cinnamon, ground nutmeg, and salt. Set aside.
  3. In a large bowl, cream softened unsalted butter with granulated sugar and brown sugar until light and fluffy, about 3 minutes.
  4. Beat in the egg and vanilla extract until combined.
  5. Add pumpkin puree and mix until fully incorporated.
  6. Gradually add dry ingredients to the wet mixture, mixing on low speed or folding by hand until no flour streaks remain. Avoid overmixing.
  7. Gently fold in semi-sweet chocolate chips with a spatula.
  8. Using a cookie scoop or tablespoon, drop dough balls about 2 inches apart on the lined baking sheets. Wetting hands slightly helps with sticky dough.
  9. Bake for 12 to 15 minutes, or until edges are set and tops look just firm but still soft.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
