Ingredients

Scale
  • 4 cups fresh peaches, peeled and sliced (about 56 medium peaches)
  • 1/2 cup granulated sugar (adjust based on peach sweetness)
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 cup all-purpose flour (can swap with almond flour for gluten-free)
  • 1 tablespoon granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cut into small pieces
  • 1/3 cup whole milk (or dairy-free alternative like oat milk)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease your 9×9-inch baking dish with butter or non-stick spray.
  2. In a large bowl, toss the sliced peaches with 1/2 cup sugar, lemon juice, cornstarch, cinnamon, and nutmeg. Set aside for 10 minutes.
  3. In a medium bowl, whisk together flour, 1 tablespoon sugar, baking powder, and salt.
  4. Cut the cold butter into the flour mixture using a pastry cutter or fingers until coarse crumbs form with some pea-sized bits.
  5. Add the milk to the flour mixture and stir gently just until combined; do not overmix.
  6. Pour the peach filling into the prepared baking dish and spread evenly.
  7. Dollop spoonfuls of the cobbler topping over the peaches, covering as much as possible but leaving some gaps.
  8. Combine 2 tablespoons sugar and 1 teaspoon cinnamon in a small bowl and sprinkle evenly over the cobbler topping.
  9. Bake for 35-40 minutes until the topping is golden brown and the peach filling is bubbling.
  10. Let the cobbler cool for 10-15 minutes before serving.

Notes

If crust browns too fast, tent loosely with foil halfway through baking. Let cobbler rest before serving for better texture and flavor. For dairy-free, substitute butter with coconut oil and milk with plant-based milk. For gluten-free, use almond or gluten-free flour. Peeling peaches is easier by blanching in boiling water for 30 seconds then shocking in ice water.
