  • 1 teaspoon (5g) baking soda
  • 1 teaspoon (5g) baking powder
  • 1 teaspoon (6g) salt
  • 2 tablespoons (25g) sugar
  • 2 teaspoons (4g) caraway seeds
  • 3/4 cup (120g) raisins
  • 1 3/4 cups (420ml) buttermilk
  • 2 tablespoons (28g) unsalted butter, melted

Instructions

  1. Preheat your oven to 425°F (220°C). Place your cast-iron skillet or baking sheet inside the oven to warm up while you prep.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, sugar, and caraway seeds.
  3. Stir in the raisins, tossing them lightly with the flour mixture to prevent sinking.
  4. In a separate bowl, combine the buttermilk and melted butter.
  5. Make a well in the dry ingredients and pour the wet mixture into the center.
  6. Gently mix with a wooden spoon or spatula until the dough just comes together; it will be sticky and loose.
  7. Turn the dough onto a floured surface and lightly knead 3-4 times to form a rough round loaf.
  8. Shape the dough into a round about 7 inches (18cm) in diameter and place it on parchment paper.
  9. Score the top of the loaf deeply with a sharp knife, making a cross about 1/2 inch (1.3cm) deep.
  10. Transfer the parchment paper with the dough onto the preheated skillet or baking sheet.
  11. Bake for 30-35 minutes until the crust is golden brown and a toothpick inserted in the center comes out clean.
  12. Remove the bread and cool on a rack for at least 20 minutes before slicing.

Notes

Do not overmix or overknead the dough to keep the bread tender. Preheat the skillet or baking sheet to achieve a crispy crust. Score the loaf deeply to help it expand while baking. If crust browns too quickly, tent with foil after 20 minutes. Buttermilk is key for rise; use milk with lemon juice as a substitute if needed.
