A creamy, hearty, and mildly spiced white chicken chili that’s perfect for chilly days and effortless to make in a Crockpot.

  • 2 boneless, skinless chicken breasts or thighs
  • 2 cans great northern beans, drained and rinsed
  • 1 can whole kernel corn, drained
  • 1 small can diced green chilies
  • 4 cups low-sodium chicken broth
  • 8 ounces cream cheese, softened
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • Optional toppings: sour cream, shredded cheddar, chopped cilantro, tortilla chips

Instructions

  1. Place the chicken breasts at the bottom of your Crockpot.
  2. Add the northern beans, corn, green chilies, onion, and garlic on top of the chicken.
  3. Pour in the chicken broth and sprinkle the spices evenly over the top.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the Crockpot.
  6. Stir in the cream cheese and let it melt completely, stirring occasionally until fully combined.
  7. Serve hot with your favorite toppings like sour cream, shredded cheese, chopped cilantro, and tortilla chips.
