  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • 1/2 cup sun-dried tomatoes (about 75 g), roughly chopped, packed in oil, drained slightly
  • 3 cups fresh spinach (about 90 g), loosely packed
  • 3 cloves garlic, minced
  • 4 oz cream cheese (115 g), softened
  • 1/2 cup cottage cheese (120 ml), small-curd (optional)
  • 1/2 cup heavy cream (120 ml)
  • 1/3 cup grated Parmesan cheese (30 g)
  • 1 cup chicken broth (240 ml)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil (preferably extra virgin)

Instructions

  1. In a medium bowl, combine softened cream cheese, cottage cheese, heavy cream, grated Parmesan, minced garlic, and Italian seasoning. Stir until smooth and well blended.
  2. Place chicken breasts in the bottom of the crockpot in a single layer. Season lightly with salt and pepper.
  3. Scatter chopped sun-dried tomatoes evenly over the chicken breasts.
  4. Pour 1 cup chicken broth over the chicken and sun-dried tomatoes.
  5. Spoon the creamy cheese mixture evenly on top of the chicken and broth, spreading gently to cover.
  6. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until chicken reaches 165°F (74°C) and is tender enough to shred easily.
  7. About 15 minutes before serving, stir in fresh spinach and allow it to wilt.
  8. Taste the sauce, add salt and pepper if needed, then mix gently to combine.
  9. Serve the chicken and sauce over your choice of sides such as creamy polenta, pasta, or mashed potatoes.

Notes

If the sauce is too thin after cooking, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir into the crockpot. Cook an additional 15 minutes to thicken. Use a meat thermometer to ensure chicken reaches 165°F (74°C). Add spinach only in the last 15 minutes to keep it fresh and vibrant. For dairy-free adaptations, substitute cream cheese and heavy cream with coconut-based alternatives and use vegan cheese or nutritional yeast instead of Parmesan.
