  • 1 lb lean ground beef or turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 14.5 oz canned diced tomatoes with juice
  • 15 oz canned corn, drained
  • 15 oz canned black beans, drained and rinsed
  • 4 cups beef or chicken broth (preferably low sodium)
  • 1 packet ranch seasoning mix (about 1/4 cup or 30 g)
  • 1 packet taco seasoning (about 2 tablespoons or 14 g)
  • 2 tablespoons tomato paste
  • 1 cup water
  • Optional toppings: shredded cheese, sour cream, sliced green onions, crushed tortilla chips, fresh cilantro

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef or turkey and cook, breaking it up with a spoon, until no longer pink, about 6-8 minutes. Drain excess fat if needed.
  2. Add diced onion and minced garlic to the skillet with the meat. Cook until onions are translucent and fragrant, about 3-4 minutes.
  3. Transfer the cooked meat, onions, and garlic into the crockpot. Add canned diced tomatoes with juices, drained corn, rinsed black beans, tomato paste, broth, water, ranch seasoning, and taco seasoning. Stir well to combine.
  4. Cover and cook on low for about 4 hours, allowing flavors to meld and soup to thicken. Alternatively, cook on high for about 2 hours if short on time.
  5. About 10 minutes before serving, stir the soup and taste. Adjust seasoning with salt and pepper if needed. Add broth or water if soup is too thick.
  6. Ladle soup into bowls and top with desired toppings such as shredded cheese, sour cream, green onions, or crushed tortilla chips.

Notes

Brown the meat thoroughly to add rich flavor and reduce grease. Use low sodium broth to control saltiness. Avoid over-salting before cooking as seasoning packets contain salt. Stir gently before serving to blend flavors. If soup is too thick, cook uncovered on high for 15-20 minutes or add broth/water. For spicier soup, add jalapeños or cayenne pepper. Vegetarian and dairy-free adaptations are possible.
