A comforting and easy crockpot sloppy joes recipe featuring a sweet and tangy sauce made with brown sugar and Worcestershire sauce. Perfect for busy weeknights and crowd-pleasing meals.

Ingredients

Scale
  • 1 lb (450 g) ground beef (80/20)
  • 1 medium yellow onion, finely chopped
  • 1 small green bell pepper, diced (optional)
  • 2 garlic cloves, minced
  • 1 cup (240 ml) tomato sauce
  • ½ cup (120 ml) ketchup
  • 2 tablespoons brown sugar (packed)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 6 hamburger buns or sandwich rolls

Instructions

  1. Finely chop 1 medium yellow onion, dice 1 small green bell pepper (if using), and mince 2 garlic cloves. Set aside.
  2. Optional: Brown the ground beef in a skillet over medium-high heat until no longer pink, about 6-8 minutes. Drain excess fat.
  3. Add the browned beef (or raw beef if skipping browning), chopped onion, diced bell pepper, and minced garlic to the crockpot.
  4. In a bowl, mix together tomato sauce, ketchup, brown sugar, Worcestershire sauce, Dijon mustard, apple cider vinegar, salt, and black pepper.
  5. Pour the sauce over the beef and vegetables in the crockpot and stir gently to combine.
  6. Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours if pressed for time.
  7. After cooking, taste and adjust seasoning as needed. If sauce is too thick, stir in a splash of water or broth.
  8. Lightly toast hamburger buns on a skillet or under the broiler for 1-2 minutes until golden.
  9. Spoon generous amounts of the sloppy joe mixture onto the toasted buns and serve immediately.

Notes

Browning the beef before slow cooking adds deeper flavor but can be skipped for convenience. Adjust sweetness with brown sugar to taste. Use gluten-free buns or lettuce wraps for gluten-free or low-carb options. To thicken sauce if watery, cook uncovered on high for last 15-20 minutes or add tomato paste. Leftovers store well refrigerated for up to 3 days or frozen for up to 3 months.
