  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 tablespoon instant coffee granules
  • 1/4 teaspoon salt
  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, instant coffee granules, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Don’t overmix!
  6. Using a small cookie scoop or tablespoon, portion out the dough and roll it into balls.
  7. Roll each ball in powdered sugar, coating generously. Place them on the prepared cookie sheets, spaced about 2 inches apart.
  8. Bake for 10-12 minutes, or until the cookies are puffed and crinkled. They should look soft in the center but set around the edges.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
