  • 2 cups (475ml) milk (whole milk preferred, any dairy or plant-based milk can be used)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 3 tablespoons (42g) unsalted butter, melted
  • 3 medium ripe bananas (yellow with some brown spots)
  • 3 tablespoons (40g) brown sugar (for caramelizing bananas)
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish with butter or non-stick spray.
  2. In a large bowl, combine rolled oats, brown sugar, baking powder, ground cinnamon, and salt. Whisk together evenly.
  3. In a separate bowl, beat the egg with milk, vanilla extract, and melted unsalted butter until smooth.
  4. Pour the wet ingredients into the dry oat mixture and stir gently with a rubber spatula until just combined.
  5. Pour the oat mixture into the prepared baking dish and smooth the top.
  6. Peel and slice bananas into ½-inch thick rounds. Heat a non-stick skillet over medium heat and melt brown sugar with lemon juice until bubbly.
  7. Add banana slices and cook about 2 minutes per side until golden and caramelized, turning gently.
  8. Arrange the caramelized bananas evenly over the oat mixture, allowing caramel sauce to drip down.
  9. Bake in the preheated oven for 35-40 minutes until set around edges and slightly jiggly in the center.
  10. Let cool for about 5 minutes before slicing and serving.

Notes

Use ripe bananas with some brown spots for best caramelization. Do not over-stir the oat mixture to keep texture. Tent with foil if top browns too quickly. The bake can be prepared the night before and refrigerated. For vegan version, use flax egg and plant-based milk, swap butter for coconut oil.
