Instructions

  1. Brown the butter: Melt unsalted butter over medium heat in a saucepan, stirring constantly until it foams and turns golden brown with a nutty aroma. Remove from heat and cool to about 100°F (38°C).
  2. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper, leaving overhang for easy removal.
  3. In a large bowl, mash bananas until mostly smooth but slightly chunky. Add browned butter, granulated sugar, eggs, and vanilla extract. Whisk until well combined and glossy.
  4. In a separate bowl, sift or whisk together flour, baking soda, and salt.
  5. Gradually fold dry ingredients into wet mixture with a spatula until just combined; avoid overmixing.
  6. Lightly toast chopped walnuts in a dry skillet over medium heat for 2-3 minutes until fragrant, then cool slightly. Fold walnuts into batter.
