This cottage cheese cloud bread is a light, fluffy, and slightly tangy breakfast treat packed with juicy blueberries. Naturally gluten-free and high in protein, it’s quick to make and perfect for breakfast, brunch, or a healthy snack.

  • 1/2 cup (115g) cottage cheese (full-fat or low-fat)
  • 1/4 teaspoon cream of tartar (or a few drops of lemon juice)
  • 1 tablespoon (12g) granulated sweetener or sugar (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup (75g) blueberries, fresh or frozen

Instructions

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Carefully separate the eggs, placing whites in a large, clean bowl and yolks in a second bowl.
  3. Add cream of tartar to the egg whites. Using an electric mixer, beat on high speed until stiff peaks form (about 3-4 minutes).
  4. In the bowl with the yolks, add cottage cheese, sugar or sweetener (if using), vanilla, and a pinch of salt. Blend until completely smooth using a hand blender, food processor, or by pressing through a fine mesh sieve.
  5. Add any optional flavorings (like lemon zest) to the cottage cheese mixture. Gently fold the yolk mixture into the whipped egg whites in thirds, folding just until no streaks remain.
  6. Gently fold in the blueberries. If using frozen berries, add them straight from the freezer.
  7. Use an ice cream scoop or large spoon to drop 6 even mounds of batter onto the lined baking sheet, spacing them out.
  8. Bake for 23-28 minutes, until the tops are golden and the bread feels set when gently pressed.
  9. Let the cloud bread cool on the baking sheet for 5-10 minutes, then transfer to a rack to finish cooling. Serve slightly warm.

Notes

For best results, ensure your mixing bowl for egg whites is completely clean and free of grease. Gently fold mixtures to avoid deflating the batter. If using frozen blueberries, add them straight from the freezer to prevent the batter from turning blue. Optional add-ins like lemon zest or almond extract can enhance flavor. Store leftovers in the fridge for up to 3 days or freeze for longer storage.
