  • 1 cup cottage cheese, small curd
  • 2 large eggs, room temperature
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup almond flour
  • 1/3 cup granulated or powdered sweetener (monk fruit, stevia, or regular sugar)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 cup dark chocolate chips (optional)
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease your mini muffin tin or line it with muffin liners.
  2. Add the cottage cheese, eggs, and vanilla extract to a blender or food processor. Blend until smooth and creamy.
  3. In a mixing bowl, whisk together the almond flour, cocoa powder, sweetener, baking powder, and salt until evenly combined.
  4. Pour the cottage cheese mixture into the dry ingredients and gently fold with a spatula until a thick, smooth batter forms. Do not overmix.
  5. Fold in the dark chocolate chips, if using.
  6. Spoon the batter evenly into the mini muffin cups, filling each about 3/4 full.
  7. Bake for 12-15 minutes, or until the tops are set and a toothpick inserted in the center comes out mostly clean.
  8. Let the brownie bites cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

Blend the cottage cheese thoroughly for a smooth texture. Avoid overmixing the batter to keep the brownie bites light and fudgy. Sprinkle extra chocolate chips on top before baking for a prettier presentation.
