  • 34 pounds beef chuck roast, trimmed of excess fat
  • 3 large yellow onions, thinly sliced
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine (optional)
  • 2 tablespoons all-purpose flour
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 45 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Season the beef generously with salt and pepper on all sides.
  2. Heat the olive oil in a large Dutch oven over medium-high heat. Sear the beef for 3-4 minutes per side until browned. Remove and set aside.
  3. In the same pot, melt the butter. Add the sliced onions and cook over medium heat, stirring frequently, until caramelized (about 20 minutes). Add the garlic and cook for an additional minute.
  4. Sprinkle the flour over the onions and stir to combine. Cook for 2 minutes to eliminate the raw flour taste.
  5. Deglaze the pot with the red wine, scraping up any browned bits from the bottom. Simmer for 2-3 minutes.
  6. Return the beef to the pot. Add the beef broth, thyme, and bay leaves. Bring to a simmer.
  7. Cover and transfer to a preheated oven at 325°F (165°C). Cook for 3-4 hours, or until the beef is tender and easily shredded with a fork.
  8. Remove the bay leaves and thyme sprigs before serving. Taste and adjust seasoning if needed.
