  • 2 tbsp (25g) granulated sugar
  • 1 tbsp (15g) baking powder

  • 1/2 cup (115g) cold, cubed unsalted butter
  • 1/2 cup (120ml) milk
  • 1 large egg
  • 1/4 cup (50g) brown sugar
  • 1 tsp (5g) ground cinnamon
  • 1/2 cup (60g) powdered sugar
  • 1 tbsp (15ml) milk
  • 1/2 tsp (2.5ml) vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine all-purpose flour, granulated sugar, baking powder, and salt. Mix well.
  3. Cut in cold, cubed unsalted butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
  4. In a small bowl, whisk together milk and egg. Gradually add this to the flour mixture, stirring just until combined. Do not overmix.
  5. For the cinnamon sugar filling, mix brown sugar and ground cinnamon in a separate bowl.
  6. Turn the dough out onto a lightly floured surface. Roll it into a rectangle approximately 12×8 inches. Sprinkle the cinnamon sugar evenly over the dough.
  7. Fold the dough in thirds like a letter, then gently pat it back into a rectangle about 1 inch thick.
  8. Using a knife or bench scraper, cut the dough into 8 triangles or squares.
  9. Place the scones on the prepared baking sheet, spacing them about 2 inches apart. Bake for 15-18 minutes or until golden brown.
  10. While the scones bake, make the icing by whisking together powdered sugar, milk, and vanilla extract. Drizzle over the cooled scones.
  11. Let the scones cool slightly before serving—they’re best enjoyed warm with the icing still gooey.
