Sweet, gooey Rice Krispy treats with a tropical twist of shredded coconut, perfect for any occasion and ready in under 20 minutes.

  • 6 cups Rice Krispies cereal
  • 10 ounces mini marshmallows
  • 3 tablespoons unsalted butter
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1 teaspoon coconut extract (optional)
  • Pinch of sea salt

Instructions

  1. Prepare your baking dish by lining it with parchment paper.
  2. In a large saucepan, melt the unsalted butter over medium heat until fully liquefied. Stir occasionally to prevent burning.
  3. Add the mini marshmallows to the melted butter. Stir constantly until the marshmallows are completely melted and smooth, about 3-5 minutes.
  4. If using coconut extract, stir it into the melted marshmallow mixture.
  5. Remove the saucepan from the heat and quickly stir in the shredded coconut and Rice Krispies cereal. Mix until the cereal is fully coated and evenly distributed.
  6. Transfer the mixture into the prepared baking dish. Use a spatula or the back of a spoon to press the mixture down evenly, being gentle to avoid compressing it too much.
  7. Let the mixture cool at room temperature for about 30 minutes, or until firm enough to cut.
  8. Once set, lift the parchment paper out and cut the treats into squares or rectangles. Serve and enjoy!

Notes

Use unsalted butter to control sweetness. Work quickly as marshmallows set fast. Don’t overpack the mixture for a chewy texture. Measure shredded coconut carefully to maintain flavor balance.
