Ingredients

Scale
  • 1 lb (450 g) flank steak or sirloin, thinly sliced against the grain
  • 3 cups (300 g) fresh broccoli florets, washed and dried
  • 1/3 cup (80 ml) low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 2 teaspoons sesame oil
  • 1 tablespoon vegetable oil
  • 1/4 cup (60 ml) water
  • Optional: Sesame seeds and green onions for garnish

Instructions

  1. Thinly slice the flank or sirloin steak against the grain. Place the slices in a bowl and coat them with 1 teaspoon of cornstarch and half the soy sauce. Let it marinate for 10 minutes while you prep other ingredients.
  2. In a bowl, whisk together the remaining soy sauce, brown sugar, garlic, ginger, sesame oil, and 1 tablespoon of cornstarch. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the broccoli florets and stir-fry for 2-3 minutes. Add 1/4 cup of water, cover, and steam for an additional 2 minutes. Remove the broccoli and set aside.
  4. In the same wok, heat another tablespoon of vegetable oil. Add the marinated beef slices and stir-fry for 3-4 minutes until browned and cooked through. Remove the beef and set aside.
  5. Pour the prepared sauce into the wok and bring it to a simmer. Cook for 1-2 minutes until thickened.
  6. Return the beef and broccoli to the wok, tossing everything to coat evenly in the sauce. Cook for 1-2 minutes to heat through.
  7. Serve immediately, garnished with sesame seeds and chopped green onions, if desired.

Notes

For easier slicing, chill the beef in the freezer for 15 minutes before cutting. Avoid overcooking the broccoli to maintain its crunch. If the sauce is too thick, add a splash of water; if too thin, mix more cornstarch with water and stir it in.
