These cherry cobbler muffins combine sweet cherries, buttery cobbler topping, and a moist, fluffy base for an irresistible treat perfect for brunch or dessert.

  • 1 ¾ cup (220g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ⅔ cup (135g) granulated sugar
  • ½ cup (120ml) buttermilk
  • ⅓ cup (80ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 ½ cups (200g) fresh or frozen cherries, pitted
  • 2 tbsp (25g) granulated sugar
  • 1 tbsp (8g) cornstarch
  • 1 tbsp (15ml) lemon juice
  • ⅓ cup (40g) all-purpose flour
  • ⅓ cup (40g) brown sugar
  • 3 tbsp (45g) unsalted butter, cold and cubed
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line your muffin tin with paper liners.
  2. In a saucepan, combine cherries, sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens, about 5-7 minutes. Let it cool.
  3. In a small bowl, mix flour, brown sugar, salt, and butter. Use your fingers or a pastry cutter to create a crumbly texture. Set aside.
  4. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  5. In another bowl, whisk sugar, buttermilk, oil, eggs, and vanilla extract until smooth.
  6. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid overmixing.
  7. Fill each muffin cup halfway with batter, add a spoonful of cherry filling, and top with more batter until about ¾ full. Sprinkle cobbler topping generously over each muffin.
  8. Place the muffins in the oven and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack.
