A quick and easy recipe that combines the flavors of a classic pepperoni pizza with the crispy, cheesy goodness of a quesadilla. Perfect for parties, game nights, or lazy evenings.

  • 2 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1/4 cup pizza sauce
  • 1012 pepperoni slices
  • 1/2 teaspoon Italian seasoning
  • 1 teaspoon olive oil or butter
  • Optional: grated Parmesan cheese, red pepper flakes, fresh basil

Instructions

  1. Grate the mozzarella cheese, slice the pepperoni if needed, and have your pizza sauce ready.
  2. Lay one tortilla flat and spread 2 tablespoons of pizza sauce evenly over the surface. Sprinkle half of the shredded mozzarella cheese across the tortilla, followed by a layer of pepperoni slices. Add a pinch of Italian seasoning for extra flavor and top with the remaining cheese. Cover with a second tortilla.
  3. Place a nonstick skillet over medium heat and add 1 teaspoon of olive oil or butter. Swirl to coat the pan evenly.
  4. Carefully transfer the quesadilla to the skillet. Cook for 2-3 minutes on one side, pressing lightly with a spatula to help the cheese melt. Flip and cook the other side for an additional 2-3 minutes or until golden brown and crispy.
  5. Transfer the quesadilla to a cutting board and let it cool for 1 minute. Slice into wedges using a sharp knife or pizza cutter.
  6. Optional: Sprinkle with grated Parmesan, red pepper flakes, or fresh basil for added flavor.
  7. Serve hot with extra pizza sauce for dipping.
