  • 23 ounces brie cheese, sliced
  • 1/4 cup fresh or thawed blueberries
  • 12 teaspoons honey
  • 1 tablespoon unsalted butter, softened
  • Optional: a few fresh thyme leaves or cracked black pepper
  • Optional: pinch of lemon zest

Instructions

  1. Slice two pieces of sturdy bread, each about 1/2 inch thick. Slice 2–3 ounces of brie into thin, even slices. Rinse and pat dry blueberries if using fresh. If using frozen, thaw and dry them with a paper towel. Soften butter for easy spreading.
  2. Lay out bread slices. Spread a thin layer of softened butter on one side of each slice (this will be the outside for grilling). Flip the bread over and layer brie slices on one piece, covering the surface but not overloading. Sprinkle blueberries evenly over the brie, pressing them in gently. Drizzle honey over the berries. Add optional thyme, pepper, or lemon zest if desired.
  3. Place the second slice of bread on top, buttered side facing out. Preheat your skillet or griddle over medium-low heat for a minute or two.
  4. Place the sandwich in the skillet. Cook on the first side for 3–4 minutes, pressing down gently with your spatula. Check for a deep golden-brown color. Flip carefully and grill the other side for another 3–4 minutes, until the brie is melted and the bread is crispy. Lower heat if browning too fast.
  5. Remove from the skillet and let rest on a cutting board for 1–2 minutes. Slice the sandwich in half with a serrated knife and serve immediately.

Notes

For best results, use sturdy bread and avoid overfilling with blueberries. Chill brie in the freezer for 5–10 minutes before slicing if it’s very soft. Always thaw and pat dry frozen blueberries to prevent soggy bread. Press the sandwich gently with a spatula for extra crispiness, and let it rest before slicing for tidy, gooey results. Gluten-free and dairy-free adaptations work well with sturdy bread and vegan cheese/butter.
