Instructions

  1. Cut chicken breasts into strips about 1 inch wide and 3-4 inches long. If uneven, pound to even thickness. Season with salt and pepper.
  2. In a shallow bowl, whisk together buttermilk and hot sauce (if using). Add chicken strips, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes (up to 4 hours).
  3. Preheat oven to 425°F (220°C). In another shallow bowl, combine panko breadcrumbs, Parmesan, garlic powder, onion powder, paprika, oregano, and cayenne (if using). Drizzle with olive oil or melted butter and toss until evenly moistened.
  4. Set up a dredging station: one bowl with marinated chicken (wet), one with breadcrumb mixture (dry). Place a wire rack on a baking sheet and spray with non-stick spray (or spray baking sheet directly).
