  • 1/2 cup granulated sugar
  • 1/2 cup whole milk (or non-dairy milk)
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 2 cups diced apples (Granny Smith or Honeycrisp)
  • 1 cup powdered sugar
  • 23 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and granulated sugar.
  3. In a separate bowl, whisk the eggs until slightly frothy. Add the milk, melted butter, and vanilla extract. Mix until smooth.
  4. Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Avoid overmixing.
  5. Fold the diced apples into the batter using a spatula, ensuring they’re evenly distributed.
  6. Use a cookie scoop or two spoons to drop dollops of batter onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 15-18 minutes, or until the fritters are golden brown and a toothpick inserted in the center comes out clean.
  8. While the fritters are baking, whisk the powdered sugar, milk, and vanilla extract together until smooth to make the glaze.
  9. Let the fritters cool slightly on a wire rack, then drizzle the glaze over the top. Optionally, sprinkle a pinch of cinnamon on top.

For best results, use firm, tart apples like Granny Smith or Honeycrisp. Avoid overmixing the batter to keep the fritters light and fluffy. These fritters are best enjoyed warm but can be stored for later.
