  • 68 strips bacon, chopped
  • 1 pound potato gnocchi
  • 2 cups shredded cheddar cheese
  • 2 cups whole milk
  • 4 cups chicken broth
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Parsley for garnish (optional)

Instructions

  1. Heat a large pot over medium heat and cook the chopped bacon until crispy, about 6–8 minutes. Remove the bacon with a slotted spoon and set aside, leaving the drippings in the pot.
  2. Add the diced onion to the bacon drippings and cook for 3–4 minutes, stirring occasionally, until softened. Add the minced garlic and cook for another minute.
  3. Stir in the butter until melted, then sprinkle the flour over the onions and garlic. Cook for 1–2 minutes, stirring constantly, until the mixture forms a paste.
  4. Gradually whisk in the chicken broth, then the milk, ensuring there are no lumps. Bring the mixture to a gentle boil.
  5. Add the gnocchi to the pot and simmer for 3–5 minutes. The gnocchi will float to the top when cooked.
  6. Reduce the heat to low and stir in the shredded cheddar cheese until melted and creamy.
  7. Add salt and pepper to taste, then stir in the crispy bacon. Ladle into bowls, garnish with parsley, and serve immediately.

Notes

For a lighter version, use low-fat milk and reduce the cheese slightly. Avoid boiling the soup after adding the cheese to prevent separation. Customize with extra veggies or spices for added flavor.
