  • 6 slices bacon, cooked and crumbled
  • 16 ounces potato gnocchi, fresh or packaged
  • 2 cups shredded cheddar cheese
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • Salt and pepper to taste
  • Parsley, optional, chopped for garnish

Instructions

  1. Heat a skillet over medium heat and cook the bacon until crispy. Remove, crumble, and set aside. Reserve about 1 tablespoon of bacon fat.
  2. In a large soup pot, melt the butter and reserved bacon fat. Add diced onion and garlic, cooking until softened and fragrant (about 3 minutes).
  3. Sprinkle the flour over the sautéed veggies and stir constantly for 1–2 minutes to cook out the raw taste.
  4. Slowly pour in the chicken broth while stirring to avoid lumps. Bring to a gentle boil.
  5. Reduce heat to low and stir in the heavy cream and shredded cheddar cheese until melted and smooth.
  6. Stir in the gnocchi and simmer for 5–7 minutes, or until tender.
  7. Stir in salt and pepper to taste. Garnish with crumbled bacon and parsley before serving.

Notes

Use freshly shredded cheddar for better melting. Adjust seasoning gradually and avoid overcooking the gnocchi for the best texture.
