  • 3 cups apples, peeled and diced (about 3 medium apples, Granny Smith or Honeycrisp recommended)
  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped walnuts or pecans
  • For the Caramel Glaze:
  • 1/2 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/4 cup whole milk
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Peel and dice apples into 1/2-inch pieces. Set aside.
  3. In a large bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, beat sugar and oil until well combined. Add eggs and vanilla extract; mix until smooth.
  5. Fold diced apples (and nuts, if using) into the wet mixture.
  6. Pour wet mixture into dry ingredients and fold gently until just combined. Batter will be thick.
  7. Spread batter evenly in prepared pan. Tap pan gently to level.
  8. Bake for 40-45 minutes, until a toothpick inserted in the center comes out with moist crumbs.
  9. While cake bakes, make the glaze: Melt butter in a small saucepan over medium heat. Add brown sugar and milk; stir constantly until bubbling and slightly thickened (about 3 minutes). Remove from heat, stir in vanilla and salt.
  10. When cake is done, poke holes all over the top with a fork or skewer. Pour warm glaze evenly over hot cake.
  11. Let cake cool in pan at least 20 minutes for glaze to set. Slice and serve warm or at room temperature.

Notes

For best results, use firm apples and dice evenly. Pour glaze while cake is hot for maximum soak. Add nuts for crunch, or swap apples for pears or peaches for a twist. Store covered in fridge up to 5 days or freeze slices up to 2 months. Gluten-free and vegan adaptations are possible.
