  • 2 cups powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Instructions

  1. Reduce the apple cider: In a medium saucepan, simmer 1 cup of apple cider over medium heat until it reduces to 1/4 cup. Let it cool completely.
  2. Prepare the cake batter: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the butter and brown sugar until light and fluffy. Add the egg and mix until combined. Stir in the cooled apple cider reduction, buttermilk, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing; the batter should be smooth but not overly worked.
  5. Portion and bake: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper. Use a cookie scoop or spoon to drop 2-tablespoon portions of batter onto the prepared sheets, spacing them 2 inches apart.
  6. Bake for 10-12 minutes, or until the cakes are puffed and spring back when touched. Cool completely on wire racks.
  7. Make the filling: Beat the butter and cream cheese together until smooth. Gradually add the powdered sugar, vanilla, and cinnamon, mixing until creamy and spreadable.
  8. Assemble: Spread or pipe the filling onto the flat side of half the cakes. Top with the remaining cakes to form sandwiches.
