This White Chicken Lasagna Soup is a creamy, cheesy, and comforting twist on classic lasagna, made easy in just one pot and ready in about 30 minutes. Packed with tender chicken, spinach, Italian seasonings, and melty cheese, it’s the perfect cozy dinner for busy weeknights or chilly evenings.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 cup yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cloves fresh garlic, minced
  • 1 tablespoon Italian seasoning
  • Pinch crushed red pepper flakes (optional)
  • 6 cups low-sodium chicken broth
  • 8 oz lasagna noodles, broken into bite-size pieces
  • 3 cups cooked chicken breast, shredded
  • 3 cups baby spinach
  • 4 oz cream cheese, softened
  • 1 cup half-and-half or whole milk
  • 1 cup Parmesan cheese, grated
  • 1 cup mozzarella cheese, shredded
  • Salt and black pepper, to taste

Instructions

  1. Heat olive oil over medium heat in a large soup pot. Add diced onion, carrots, and celery. Sauté for about 5 minutes until softened and onions are translucent.
  2. Stir in minced garlic, Italian seasoning, and red pepper flakes (if using). Sauté for 1 minute until fragrant.
  3. Pour in chicken broth and bring to a gentle boil. Add broken lasagna noodles, reduce heat to a simmer, and cook for about 10 minutes until noodles are al dente, stirring occasionally.
  4. Stir in shredded cooked chicken and baby spinach. Simmer for 3 minutes until chicken is heated through and spinach is wilted.
  5. In a small bowl, whisk together softened cream cheese and half-and-half (or milk) until mostly smooth. Gradually whisk this mixture into the soup, stirring constantly until melted and incorporated.
  6. Add grated Parmesan and shredded mozzarella cheese. Stir until melted and soup is creamy. Season with salt and black pepper to taste.
  7. Ladle soup into bowls and garnish with extra cheese, chopped parsley, or black pepper if desired. Serve hot.

Notes

For best results, use rotisserie chicken for speed and flavor. To avoid lumpy soup, ensure cream cheese is softened before adding. If soup thickens after sitting, add a splash of broth or milk when reheating. For gluten-free, use gluten-free pasta. Add extra veggies like mushrooms or zucchini for variety. Soup can be made ahead; store pasta separately for best texture.
