  • 1 1/2 cups Rice Krispies cereal
  • 1 1/2 cups chocolate chips or melting wafers (semi-sweet, milk, or dark)
  • 1 teaspoon coconut oil (optional, for thinning chocolate)
  • 1/2 teaspoon vanilla extract (optional)
  • Mini marshmallows or chopped nuts (optional, for texture)
  • Sprinkles or sea salt (optional, for decorating)

Instructions

  1. In a large mixing bowl, combine peanut butter and softened butter. Blend with a spatula or wooden spoon until smooth and fully combined (about 1 minute).
  2. Sift powdered sugar into the bowl. Stir until the mixture is thick and dough-like, pulling away from the sides. If too sticky, add more powdered sugar a tablespoon at a time.
  3. Gently fold in Rice Krispies cereal until evenly distributed, being careful not to crush the cereal. If the mixture is too crumbly, add 1 tablespoon more peanut butter.
  4. Scoop about 1 tablespoon of mixture at a time and roll between your palms to form balls. Place each ball on a parchment-lined baking sheet. You should get about 24-28 balls.
  5. Refrigerate the tray of balls for at least 20 minutes, or freeze for 10 minutes, to firm up.
  6. Place chocolate chips (and coconut oil, if using) in a microwave-safe bowl. Microwave in 30-second bursts, stirring between each, until smooth and glossy. Alternatively, melt over a double boiler.
  7. Using a fork, dip each chilled peanut butter ball into the melted chocolate, tapping off excess. Return to the parchment-lined tray. Decorate with sprinkles or sea salt if desired.
  8. Chill the dipped balls in the fridge for 20-30 minutes, or until the chocolate is completely set.
  9. Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 2 months.

Notes

For best results, use room temperature ingredients and chill the balls before dipping in chocolate. Gently fold in the Rice Krispies to preserve crunch. If using natural peanut butter, the mixture may be softer—add extra powdered sugar as needed. For gluten-free, use certified GF crisped rice cereal and chocolate.
